Co-op is short for co-operative. The term may also refer to the fact that usually the cast organise the show, without having a 'crew' (in that they do their own publicity, organise their own venue, etc. - they usually hire one or two people to actually do the lighting/sound), and that they co-operatively create the performance with no specific heirachy (each has an equal share of the work, each takes on creation of the script and direction of the play).
