28th and 30th - "The Mikado"
29th - "Der Rosenkavalier"
Both presented by Opera Australia, at that funny looking building on the Harbour. More info here
Alas, you'll be too late for Pacific Opera's "Hansel & Gretel" at the SBW Independent Theatre in North Sydney (September into early October), and too early for Pinchgut Opera's "L'Orfeo" at the Angel Place City Recital Hall (December).
